Four Foods on Friday

#1. Waffles. Do you usually eat frozen or homemade?
Frozen if ever, or at a restaurant. We don't have a waffle maker - we are pancake people. :)
#2. Eggs. Do you buy brown, white, or it doesn’t matter?
Brown
#3. Oatmeal. Do you usually make instant or cooked?
Blech. Can't eat the stuff anymore. More on that later.
#4. Bacon. Share instructions or a recipe that you use bacon in.
Creole Cabbage
From Threadgill's - The Cookbook

Notes: I used my husband's homemade Canadian bacon instead of regular bacon and canned tomatoes instead of fresh to save time. I also omitted the Tabasco sauce and had it sitting out on the table since not everyone in our family likes spicy food.

6 slices bacon, diced
2 cups yellow onion, diced
4 cups tomatoes, diced
1 head green cabbage, cut into 1 1/4-inch squares
4 cups tomato sauce
1 cup water
1/2 teaspoon Tabasco sauce
1/2 teaspoon salt
1/2 teaspoon black pepper

Sauté diced bacon, add onion, anc continue cooking. Add all other ingredients and bring to a boil, stirring to avoid scorching. Turn down to a simmer and stew until cabbage is done, about 1 hour. Makes 10 big servings.
